sometimes my interior lights dim extreamily slightly when i am nearly on full lock, its the power steering taking loads of power i think
try charging, or getting a new battery
i think ill go kwik fit 2moro to get brakes and battery free check lol ive checked on JustMitch's design and his mfd dims abit but not more then mines does and i dont think his headlights dim when he uses the window/turning steering wheel either

It's due to the internal resistance of the battery - if you draw more current the voltage drops, such is life.
Powrer steering uses loads because basically it's using an electic motor to yank the steering round, which if you're stationary is quite hard (don't do it, it isn't good for your car)

Shut your eyes? Complicated mods to your lighting system?
Prob simplest would be get a bigger battery. But it's not a problem, I woudn't worry.
